Montes' were "festival" cars and the Camaros were "parade" cars.
I believe GM removed the decals after the race and simply sold these.

Part of the deal for being "selected" as the Official Pace Car, is that the manufacturer is required to supply a fleet of cars, to be used as official vehicles. On race day, many of these cars are used as parade vehicles, but prior to the race, they're used by officials, dignitaries, etc. as courtesy vehicles. Normally, most of the cars (and trucks) are turned over to local dealers, to sell after the race. Some dealers will leave the track decals on the cars, when selling them, while others will strip the banners off of them and sell them as demos.This isn't limited to Indy either, or even auto racing. The same thing is done at many Indy Car and NASCAR tracks. The manufacterers often provide courtesy cars for other events too, such as the World Series, US Open, PGA, etc.
When we were at Indy in June, for the SVRA vintage races, there was a lot behind turns 3 and 4, for track maintenance equipment. The race team golf cart rentals, were also being handled in this lot. When we went to pick up our cart, I noticed that there were quite a few new Chevy pick-ups, in the lot. There were also another 20 or more new Camaros, parked in a lot behind the Speedway Museum. This was only about a week and a half after the 500, and I guess they hadn't distributed the vehicles yet.
Usually, only vehicles used for on track activities, got any kind of badging on them.
