C3 Capet Question
1.) Coupe and convertible use the same carpet?
2.) Is their a preferred vendor for quality and ease of installation (minimal cutting to fit)?

I'm surprised you had any issue with the 1978-1982 carpets from ACC, we installed a set four months ago and it was a great fit for us
The only thing I complain to ACC about on the 78-82 cars is that too much trimming is required... and when you install the side boards on the shift console you must make sure to pull the carpet up about 1/16" so that it tucks under the shifter console and parking brake cover better than the GM carpet did.
I own a very low mile 1978 and did published some documentation on the factory flaws in that car, one of the issues when the cars were new was the fit of the rear carpet and the most annoying is how horrible the factory kick panels and the center console carpet looked when installed.
In regards to the earlier cars, about a year ago we started working with ACC to make needed corrections in the carpet sets. Every year was corrected from 1968-1977. On the 1968-1972 cars we now have pictures on our facebook page and on the Willcox Repair and Installation Help Site that will make installing the rear wheel humps way easier.
Here is what I'm talking about on the shift console... Please ignore the sheep wool covers, they were on the seats when I got the car.

My expectations was that I would not have to "custom" cut a ton of places to get it to some what fit. As cutting does not fix the areas that the carpet should have been molded, you get areas in corners that overlap and pucker up. Not a great look.
Did not like the looks of the console carpet sides and cut 2 more backings and put matching leather on them. Trashed the carpet.
The carpet for the front is molded to fix. No real issues. No reason the back also could not be done the same way.
Advertising the carpet as "custom fix" is just not true for the rear carpet. The installer should be prepared to spend a lot of time to get a so-so looking install.
If the descriptions of the carpet provided the real details, I would have looked elsewhere and/or paid a professional to install better quality carpet.
