Yep, similar issue for me too. I pulled my heater core out years ago and had the same situation. I used poison in the past, but it seems the mice would die in areas my 69 which caused me more time to remove the parts to get to them(bad smell). I use Irish spring soap, moth ***** and old style mouse traps for my defense.
When I painted my 69 this past year, I found out the mice had some nice homes in my door panels too.

We have used bounce sheets the last couple of years and have had no more problems.
When I changed the heater core on my 1970 I found them in the same place. They were snacking on the blower fan as well. The good thing was that my dash wiring was not touched. I now use the fabric softener sheets like Gator.

Found a nest twice the size of a softball in the jack cubby of '74 roadster I recently acquired. I found the rubber drain tube was missing which made it easy for the critters to get in.
I buy three bars of irish spring soap ,cut it up in small pieces and spread the pieces around the tires ,mice do not like the smell of that stuff,been doing it for years!!!
Used to put moth ***** in the car over winter storage. Kept all the critters out but needed to be aired out before driving again. Dryer sheets sound much more pleasant.
