I had a combination red carpet with black interior when I got the car. When I replace it I'm going with one color like original but I've seen some interiors with contrasting colors and they look good.
I swapped out my black carpet for grey. The black always seemed to degenerate to some off-color condition and I figured the gray might not. Also I decided that the gray would lighten up the interior a bit. Happy with the change. The pictures below don't capture what you probably want to see which is the driver's viewpoint but they're all I've got and can get for right now. What probably helps in my situation is the car is silver so the carpet color is somewhat compatible with the exterior. Are you sticking with the silver in your avatar? I think you will be happy under that circumstance.

My car now has a white exterior.
I had another 60's car with a white exterior and black interior with gray carpet, although that car did not have an extensive dash like the corvette, It was a black dash pad with silver paint on the part facing the driver
The reason I liked the gray was it didn't show every little bit of trash on the floor. And it did lighten things up a bit.
