I am painting my 70 coupe the factory red and don't want the boring solid black factory interior. I am thinking I want to keep the black dash, console and door panels... & install red carpet and red inserts on the door panel... & have leather seats made with black exterior and red inserts. I had a new Mustang a few years ago with this interior and it looked great! Who has done a similar thing? For the most part, I'm keeping it very factory, except for these changes.
The factory did two tones like this in 76. They used white door panels and white seats for a contrast to the basic interior color. Just throwing out ideas for you.

If it were me putting in a new interior I think I wold have the carpet black for no reason other than showing stains. I have red interior and like black on the shift plate, radio, and speedo. I think black carpet and black door inserts would look pretty nice and then do some black accents to the seats.

I was thinking the same when I picked out new carpet for my silver anniversary. I kept the oyster dash, trim, seats, and dyed the door inserts and the park brake surround to match the black carpet. Been happy with the way it came out. I still might change the oyster steering wheel though, it constantly needs cleaning from my grubby hands.

It's a big improvement over the way it was in mid april when I got the car. The door patches and cargo doors were a dark, possibly greenish grey, the carpet was silver, and the console side panels were a slightly less dark grey. Then add the oyster, and although everything was in relatively decent shape and complete, it looked pretty weird. I just wish I had decided to go black before I ordered the nice set of Lloyd mats. Those don't look bad in silver, but would be better in black. Oops
I'm working in that direction. I'll keep the dash, door panels, and center console black. I'm undecided on the carpet, now that I have the red seats. The upper parts are Oyster, a look stolen from my Jeep Renegade.
Looking at the C7 interior, black carpet, red door panels and console sides may be the way to go.

The PO installed these red and black seats in my 68 convert.
Yeah, I love the 68 with some color on the inside! I like the DIN radio and love the seats, and wonder what red carpet will do to make it look even better? Like they say, beauty is in the eye of the beholder.
