If they are air-shocks or coil-overs then of course they can change the height of the rear and affect the alignment.
In theory a high pressure gas shock could slightly raise the rear of the car (not a lot but compared to an oil shock maybe 1/4")
But chances are if it was correct before it should still be now. take it for a drive and let everything settle back in and it'll likely be fine again

Like Mooser said if the alignment was ok before the shocks it should still be. Did you tighten the shock bolts with the suspension hanging down?
The FAM says to tighten the bottom shock bolt with the car at ride height. If the bolts were tightened with the suspension hanging try loosening the bottom bolts, move the car a few feet to let the suspension settle in and re-tighten the bolts with the wheels on the ground.I don't know if that will help but its cheaper than an alignment and won't hurt anything.
