Default Choke Issues.

Hey everyone, it's me again, the guy with all of the carb issues in the world.
today I'm coming to you with choke questions - so kinda carb related.. here's the scoop...
A few nights ago while making some adjustments, I melted the choke power cable to my holley 4160 600cfm carb.. no biggie. Ran a new one, double checked for power, all seems to be good.
hook the little black circle up, making sure the loop catches the metal rod in the choke hole- all is swell. Only, I notice that when the choke is fully open it's at like 2 o'clock. When closed without struggle, right around straight up and down, maybe 1 oclock...and when fully closed, it's at the farthest hatch mark on the left (see photos).
so, I know when you set it, you are supposed to set fully open, then adjust it back to closed... if I set it to open, then its outside of the hatch marks, and setting it to open then right when it closes, it's still outside the hatch marks... is that correct??
also... here's the bigger issue - the car wont stay running now (unless fully warmed up).. I tried closing the plate all of the way and holding it there and it still struggles... gotta give it gas...
thoughts?

No pressure anywhere, this is where it sits.

This is where it first catches.. notice its not fully closed... its catching on the red stepdown lever.

This is after i fully close it.. the lever remains stuck on the mounting point.

If i force it fully closed. The red stepdown lever presses hard against a piece of the carb if i do this, seems incorrect.

The adjusting screw on the choke is used to set the RPM to about 1500 or so at cold start. The black cap rotational adjustments rotate to change the amount of time it takes to open fully.

I would start by doing a cold start with the power to the cap disconnected and set the choke idle screw to achieve about 1500 RPM cold idle speed. The next step would be to set the black cap mark to the marked triangle area on the choke housing as a baseline. Then reattach the power and go for a drive. Adjust the black cap rotation setting "richer" or "leaner" depending if the choke stays on too long, or pulls off too soon, based on your experience. Thats about all there is to it.
