Another option would be to hang on to it until the spring car show season and then see if you can drive enough to generate some conversations and likely some interest about it.

I used to restore 65-66 stangs - owned 21 verts and 7 ht's. Fun cars that are built very cheaply (like most everything then). Sounds like it sat for quite a while so you're probably ok, but beware they rust easily. And since they don't have a full frame the verts often sagged in the middle due to problems where the rear sub was welded to the rear floor pans - check that area and also take a look at the rear of the door edges and surrounding areas - guys often ground the area with a grinder and used a bit of mud/paint to hide the fact that the doors didn't fit right due to sagging and unsuspecting buyers could be fooled.
As far as value, it all comes down to condition. Is it running and driving with no issues? How is the paint and interior?

Hers is in excellent condition, recently restored and cost her $20K. [not a great deal but was fair]
It's not a Corvette but I have come to really like the car, it is a fun driver.
