The power steering pump on my '79 is mounted under the alternator on driver's side. The alt bracket is right above the p/s pump cap making it quite difficult to remove not to mention trying to actually get p/s fluid in there. I managed to put some in but getting the cap back on was even harder. It came off so it has to go back on, right? I got it back on but didn't bother trying to remove it again to check the level.

its the same on my 80! I use a long funnel when in need to add fluid
Sadly, as much as my power steering system has leaked, I've become a pro at taking off an putting back on the pump cap. 79 here as well, so same boat as you. Not sure who the genius was that designed the setup but I'd like to write them a "thank you" note.
