0 offset on a 7” wheel is 4” of backspacing, while -11 on an 8” wheel is about 4 1/16”. Your factory wheels are 8” wide with 4” backspacing, meaning the fronts will sit 1/2” inward because of the skinnier wheel, and the rears will be in 1/16” because of the increased backspacing.
Like what was said above 255/50r17 works well on the 8” wheels. For the 7” ones 225/55r17s could work.

Here’s something to consider. They’re not coming out until next year, and I’m unsure of the available sizes and price, but they’re real raised white letter tires for 17s!
I'm a fan of TT 2's. Pics of my 71 C3 and 80 Camaro.
Both have18". 275/40 in the back and 245/40 in the front.
Zero rubbing on either car.
One of the nice things about the grey centers is that the outer polished areas are clear coated, I think clear powder coat so no polishing.
The polished 18's need polishing once and while.
