How easy does a Vette roll over on say, a road course? Do they mostly just spin out or do they flip easly? Or must you hang a wheel on something to make em flip?

any car going sideways that hits a lip is in danger of rolling over....especially if both tires hit it at the same time....
I am constantly befuddled by the number of people who go slow through corners (on the street) because they are afraid they will tip over! Short answer, no, you won't flip unless you "dig in" like into a ditch or gravel trap.
Now there is some point in the geometry that if the C o' G gets too high or track width gets too short, it is possible to flip before sliding. Fortunately, you only reach this point with trucks or Suzuki Samuris! And I'm not even sure that most pickups wouldn't be okay too. The possible exception is sawing the wheel back and forth, if you do it right (wrong) you get reactive spring forces (made up term), which could start lifting wheels.
