I was driving the vette today and I noticed that the choke light doesn't turn off. I was reading around and someone said that if it doesn't turn off after like 5 minutes then something could possibly be wrong. What are some things I should check for that might help me find what the problem might be. It's running really rich which I assume what the choke means!! Thanks in advance.
For what its worth. Mine stays on constantly (most of the time ). I have some type of "connection" between my choke light and the blower fan. My fan will work for awhile then quit. That's when my choke light stays on. I'll check the connections on the blower fan, then magically it will start working again and then I notice my choke light starts acting normal (that is, it will light up when starting the car then go out a minute or two later). Hope you figure out your problem. I'd like to find out your solution, maybe it will help me figure mine out. Good Luck!
Does anyone know if messing with carb settings will cause choke light to come on? I only ask because I smell so much gas when the car is on. It's running super rich. Perhaps maybe the previous owner messed with the settings and made it run to rich.
I'm really not sure where to start looking to try and fix the choke light issue.

Remove your air cleaner/filter. Look at the top front of the car. If you have a choke, there will be what looks like a trap door on the front part of the carb opening. In normal operation, this flap is open or almost vertical. It should only be partially closed on initial warmup. Your's may sticking closed.
On a 1980, the choke light will stay on if the alternator is not charging, or putting out a reduced output. Since the 1981 has a computer, I am not sure if the electric choke functions the same as on the 1980.

to the battery and measure the alternator output at idle.

I have a '80 that the choke light comes on at start. After a few seconds, the choke light goes out and the battery light comes on. From what you said, that would make me believe the alternator is not charging. Except it has done this for years, and the alternator must be charging. Loose ground possibly? Do you have any ideas on what would cause this? How I might troubleshoot this? I'm pretty much an electricity idiot.
I am not enough of an electrical wizard to help you determine why
the battery light is coming on. Even though you mention the light
has been coming on for some time, I would still check the output of
the alternator. I have had alternators put out a reduced output when
one leg of the diode fails. This often causes the battery light to
come on. A simple check would be to use a volt meter to measure
the output of the alternator at engine idle. It should be putting out
around 13.5 volts.
If the voltage is lower, I would take the alternator apart and test the
diode with an ohm meter. Or if you have a spare alternator, install it
and see if the battery light remains off.
Another suggestion would be to get the service manual for the car and
study the electrical diagram to see how the battery light is wired.
