Default fuel restriction?

Boy have I got what may be a real newbie question. I've got a 350 with moderate work (bored .030, aluminum heads, Air gap intake, Lunati cam, Holey 650cfm carb). When I go to full throttle, the carb seems to bog down (that's just my observation, it may be completely off). Is it timing related, accelerator pump related or something else? Along that line, when I do get chugging, say cruising at 80 MPH, the car will start to buck as though it can't get enough gas...
Any clues?

you may have a fuel starvation problem caused by a clogged fuel filter or poorly performing fuel pump

If it is a fuel starvation problem and I'm looking at a replacement, what are the pros and cons of converting to an electronic fuel pump.

I am not an electric fuel pump fan unless you put in an inertia kill switch in case you get in a crash....the old fuel pumps work very well

I have a glass sight on my filter (less than 500 miles). It shows no signs of dirt or contaminants. Could there be blockage in the rubber lines? If so, how can I check it.

disconnect the glass filter crank enginewith coil grounded and watch, measure and time the amount of fuel it spits out....then compare to specs...(.i'm making this number up ...1 gallon per minute...)

I had similar problem last year with my Holly. I had the bronze inlet filter in backwards.
