I am currently running an Edelbrock 600 cfm Performer carburetor on my 350 and for lack of a better idea have the vapor canister connected to the ported vacuum.
My questions are…
Is this a good idea?
What would be a better idea?
Or
Should I just cap them both?

I would think manifold would be better so you pull vapor at idle. If you don't have the canistor connected you need to use a vented gas cap
A lot depends on the year and what you're trying to accomplish.
I have no idea of how much flow of air the canister will allow but I don't think that you want it reducing your manifold vacuum significantly. Perhaps a restrictor of some kind?
I also am not sure of what outlets your canister has. Later model C3s use a vacuum switched one with a number of different lines and functions. I know the earlier ones have less lines but am less familiar with the functions. Presumably you're trying to eliminate the "old car gassy smell"?
