Installing new valve cover gaskets on my 80 today. Does anyone know what torque setting to use on the bolts. (using rubber gaskets instead of cork. Hope thats not a no-no). Also should you use any type of sealant?

I don't know about the torque setting for your year/engine, but for my '69 427/390 it calls for 55 lb-ft.
Perhaps you or someone else reading this can help me with a related question. When installing the new gasket and cover, should gasket glue only be placed on the side of the gasket facing the valve cover? And should the glue be spread continuously around the entire perimeter?
I don't know the torque I use the crank in a speed wrench and the barely tighten method myself. The bolts are tiny and don't need a lot of force. Its almost how much force using a nut driver, you have no leverage.
I like the rubber gaskets better. You don't need any sealant but if you apply some to only the cover side you can take the covers off in the future and reuse the gaskets easily. It should stick to the cover when removed.
