I am in the process of converting my AC on my 1980 C3.
The compressor was empty of oil as was the accumulator so I'm wondering how much oil i need to put in both. The compressor says 6oz, is this the total amount for the system or just for the compressor? If so how much needs to go in the accumulator?

Most systems require 6oz total. Usually 1oz in the evaporator coil, 2oz in the condenser coil and 3oz in the compressor. The paper work with the conversion kit usually has this info with it. I do not think that you need to add oil to the accumulator; if I remember right the suction line off the accumulator comes off the bottom than straight to the compressor you do not want to slug the compressor with oil, as it will damage it.
