It's not just total output!! You have to pay attention to where in the RPM band that the alternator puts out and adjust the ratio of Crank to alternator RPM accordingly.
I changes the "gearing" and the alternator to put out 23A @800 RPM and 55A @1200 RPM and a peak output of 87A @ 4500 (engine RPM)
A good alternator shop will give you a "dyno" sheet on the alternator perfromance@RPM
I can hold 13.2 V @800RPM with the SPAL fans, lights, electric fuel pump, ECU.. on
You could also try adding one or two 1 farad capacitors to the electrical system to help even out the load. They are normally used with high wattage stereo systems to keep the headlights from flickering in time with the bass drum.
Would a bigger pulley on Alt help? If so what size?
That would slow it down even more, you need a smaller alt pulley or larger crank pulley to make it go faster. Any chance you got one of those smaller aftermarket performance pulleys?
What do you have your idle set at? Might bump it up 100 rpm's or so to see if it helps.
