On the 79L82 there is a sending unit hole on the passenger side head located between #6 and #8 cylinders. Maybe your 69 has a plug there that you can remove.
I just put mine in the upper radiator neck and put the hose over it. Been working perfect for years now, no leaks. Fans come on exactly when I want them to.

I used the passenger head "hole" on my BB, but it didn't work very well; got hot too fast and stayed that way. Put it in the water neck, or, put a tee in the heater hose coming out of the intake.
Ummm.... whichever smells the best?
Probably a bit OTT if you can use a hole in a head, but the '81 had a coolant sensor fitted for the computer. It was in the intake manifold to the p. side of the stat housing. My new Performer manifold had a small round flat with a dimple in the correct place so I drilled & tapped it for the sensor. Works great.
