Its not that big of a deal really. Personally I would go with a 160. The motor is gonna run hotter than that anyway.

Most Corvette engines equipped with the air injection reactor system (AIR) were also originally equipped with 195 degree thermostats. All LT-1s were equipped with AIR and all were originally equipped with 195 degree thermostats.
Now, that just says that's what they were ORIGINALLY equipped with. If you wish the engine to operate at a lower temperature (and assuming that your cooling system is capable of maintaining a lower temperature) you can switch to a 160, 170, or 180.
