Default deck clearance and optimum quench

I am having trouble trying to determine how to get the optimum quench of .040. If I run the piston all the way to the top and measure the distance between the top of the piston and the top of the deck, will this give me the "deck clearance"? So if this gives me the deck clearance, and say it was .010, I could get a head gasket that measures .030 and have the optimum quench number. Is this correct or am I wrong? I do not know how much the block has been decked so that is why I through out the number .010.

Yes, different gasket thicknesses are available. On my 383, I checked the deck height, it was -.009 inches down. Therefore, I used a .028 thickness gasket to give a final quench value of .037. You could use the same gasket.

If needed, Victor Reinz offers composition gasket that's slightly thinner ... 0.026" compressed x 4.100" bore ... Victor Reinz P/N 5746.

I would be very suprised if you are anywhere near .010 I deck the block so the piston is right flush with the top of the block then use a good composite gasket which is .039 or .040
I am not a fan of steel gaskets or copper.

If the block has NOT been decked ... pistons are likely 0.020" to 0.045" down in hole ... depends on pistons' part number/compression distance. Many blocks get "zero decked" during hi-po build ... but, to do a routine clean-up & leveling, machine shops may mill off as little as 0.005".
