speedo jumps
The other thing I just thought of is that it may be the length of the cable you replaced. On mine, I had a cable that was too long and the speedo kept doing what yours is and also sometimes didn't work. I took it to a guy who has been doing speedo's for like 50 years and he knew right away. He cut the cable and presto, it worked perfectly.
Every time I've had a jumping speedometer, the cable needed to be lubed.

This makes sense. My speedo jumped until the cable snapped or the gear was replaced....can't remember which as it was over 15 years ago.
Suggest you check / replace the cable / gear as necessary. That should fix it.

I found a neat lube tool that goes on the end of the speedo cable and fits right on the grease gun. DONT pump too much in their, just a little at a time...
