Default 82 Elect fan switch ?

The PO's of my 82 wired the electric fan to a hot feed so it runs all the time. I figured it was because the thermal switch had failed (& because a new one came with all the misc spares).
The new switch is rated at 113 deg C which is close to 234 deg F & the manual comfirms this. Spec is that the switch kicks the fan on at over 230 & shuts off at 200
That is WAY too hot for my comfort. I would like to put in a lower range switch (like I did in my 85), one that turns on at 200 & shuts off at 180. I know I will have to change the thermostat to a 180 instead of 195.
Has anyone done this or see any problems with doing this mod. The engine is a stock Cross-Fire, no mod other than K&N's & it was originally a Florida car.
Where would I get a switch like this ?

that is an auxiliary fan intended to help out in slow traffic and turns on when the head gets to 230 or so, that was concidered normal operation.
