Default Jetting Up

In the past whenever jetting a Holley carb, I would keep jetting up by 2 size increments until I see the plugs start to turn black, then down to the previous size.
Is this how it should be done, or does anyone have a better way?

Make a timed run between 40 and 70 MPH in second gear on the same section of road to guage your progress. This turns your car into a dyno.

That might get you close but the only way to really know is with a wide band O2. Electronics are great when used right. This will get you exactly right on. The spark plug reading is getting tough with unleaded fuel and high energy ignitions. I know mine has been running rich and the plugs look great. I know have a wide band O2 sensor going in.

Any suggestions on a good one to use? Will it also tell when the power valve in the carb is opening?
