These are pretty cool gadgets.
Does anybody know normal operating temps for headers? Mine are coming in around 350 degrees.
Also, what is normal for exhaust gases? Can you identify a lean/rich condition using temp alone?

And yes you can tell a rich cylinder because it will be cooler that the rest and a lean one will be hotter. Since minor variations will occur normally, I would average the temps and if you have one that is noticably higher (or lower) you might investigate further.
These are a great tool to verify the correct air pressure to run in your tires as well. Take the car for a nice drive to ensure the tires are warmed up and stop the car in a place where you can stop in as straight a line as possible. Jump out and take at least three temps across the face of the tire. If all three temps are the same you are running the correct pressure. If the outside edges are cooler than the center, you have too much air in them. If they are warmer there is too little air. I adjust the air a couple pounds at a time until temps are even. The reason you want to stop in as straight a line as possible is so you don't skew the readings by having the tires scrub as you come to a stop.
