Can headlight doors be adjusted?

I'm not talking about aiming. Just want to match up the gaps in the closed position.

Yup. Are you interested in the gaps at the front/rear/sides? If so, the adjustment will be made at the pivot point. Side to side adjustments are made with the collars that lock the shafts against the hinge pivots. Front to back adjustments are made by loosening the 3 bolts that hold each hinge and moving it around. You'll probably have to adjust them again after this to make them sit flush with the surround. The adjustments should be in the AIM.

The ecklers fiberglass repair book has a whole section on how to adjust every aspect of the headlights. You might want to invest in one of these, its a great book.
