Everyone will probably think I'm weird for this comment (when they would really think I'm weird for all of the stuff they don't know about me), but I think it depends on the car's "personality". By that I mean, I think that cars get used to being driven a certain way and that a radical change from that driving style can wreak havoc with the car. I let mine sit for almost 6 months on jack stands. Then I drove it maybe 50 miles per week for another few months. Now, I think I've got a lifter collapsing and I've got all other kinds of engine rattles. It could just be coincidence or it could be that the drivetrain has 150k+ on it. Or, maybe it's because I let it sit so long after being my daily driver.
Anyway, to answer your question, I think that in general, you should try to take your car out for a minimum of one 30 min or more ride every week. But, I think daily or every other day is best for a car.

I'm a firm believer in use it or lose it. Cars are the same. You gotta keep those juices flow'n. I try to run my '70 year round at least once a week(in between repairs). If there's snow on the ground here, I'll just back her out of the garage and let her idle a bit. Sometimes in the winter, if the roads are clear of snow, ice & salt, I'll take her out for a brief run. In the summer I usually get her out both days of the weekend.
I've read about one old Vette that had 14 miles on it....I think it was a '64(or in that era). A vehicle that old with that few of miles is worthless to me. The entire engine I'm guessing would probably need rebuilt. Rubber deteriorates and seals leak over time. Originality at that point is meaningless if you can't drive the car.
Every week or two is sufficient. But I found that I had far fewer vacuum leak problems when I was driving mine every day for a month. :D Make sure you get a battery disconnect switch and use it ALL the time.

Between spring and late fall mine see's an average of 8000 miles a year. In the winter months I've always got something apart. I do believe that leaving it sit for too long does dry up seals and vacumn hoses..it's something I worry about and double check each spring after it's back together. Also...the first startup(if I didn't have the engine apart) is treated like a new rebuild... Breakin lube on the lifters and pushrods and rockers...preoil the engine...etc. Going on 200,000 miles...still running
