Now what are these for
Those 2 -6 AN fittings off the side of the water pump.
What the heck would I use those for?

you wouldn`t but some race heads have a provision so you can run a -6 cooling line from the water pump (as you show) or from the runners on the waterpump housing to the center of the head on the exhaust side.....

Yup, it's a mod to even out cyl head temps over the head, drilling and tapping a haed yourself is very easy.

my old Brodix heads had a water port on the intake side about in the middle, but that might require a mod to your intake.....

Intake
Can't you just drill and tap a hole on the intake at the back water port of the head and get the same cooling affect by connecting the lines?

If you study an L98 later aluminum head engine what you find is just exaxtly that was done...but it's only a 3/8 line...very small....
