Any suggestions on the best location for an O2 sensor? Perhaps I should just one in each header collector? All ideas welcome.

Mine is in the collector and it works fine there.

 

How do you take reading and use them on an older C-3 without computers?

Take a look at the site below. A friend of mine asked me to tune his MGB carbs and I told him I wouldn't touch them unless he bought an air/fuel ratio monitor. He bought the one below and it has been a blast tweaking his carbs. You see results from mixture adjustments and get a good feel for what's happening.
