I don't know about '80's, but the '79's went to 355's (from a 313 or something) stock w/TH350's to lose some of the emission slugs that had been building up. Or so I have read.

Yep, the '79s have 355 gears and why several of us have gone the T5, 700R4 and 2004R route

The stock ratio is something like 3.07:1 so changing the gears will help a bunch. 3.55 or so would be good IMHO.
I would be looking at the exhaust system (if stock). The stock heads are also going to frustrate you more with those 3.55 gears - you will run out of RPM quickly because they do not flow well.
These rubber bumper cars can run as well as the older chrome bumper cars but you have to chage some stuff to make them work like they should.
You will definitely notice an improvement, but as previously stated, I wouldn't go higher than a 3.70 gear as highway driving becomes very loud and proud. 3.55 is a safe choice for the best of both worlds.
