The bimetal spring is attached to the manifold with a machine screw, then the whole thing is covered with a sheetmetal cover, if you have the stock manifold. You can see drawings in the venders catalogs.
Used to be able to... maybe 5 to 7 yrs ago I got the choke spring from Napa. They discontinued the part, so now you are at the mercy of the vette specialty vendors, and hope they have the right one and don't mark it up too much.
Those choke stoves are similar to those used by Camaros and Chevelles. Auto Parts warehouses should stock them. The problems presented are that they will not normally be listed in computers by application due to the age of the cars. Discriptive calalogues with pictures are available at ALL those warehouses. Take the old one with you.
If you don't have any luck in searching it out at the local stores , maybe this can help:
Edelbrock has a choke kit available thru Summit , for use on Performer manifolds, when mounted to their adapter plate supplied with the manifold. Looks like it might be a suitable replacement for the GM unit -
Here's a possible source for the gm replacement from Volunteer vettes , don't know why the year / engine listing doesn't cover your '69 , but here's the link anyway.
Year One has a good selection but you might have to look under Camaro section. Lars told me about that. Be carefull on which way the spring unravels, I think it has to push up.
