Bad ground at the sender in the block. Remove and clean. Maybe a bad sender, replace. If those don't change it your gauge may be failing. Lets hope it's one of the first two.
Tip: Drain block before pulling coolant temp sender. You can drain the block with the two plugs on either side, in the middle of the block, down close to the oil pan. It's just up and over from the mounts.
