I need to remove the oil pan to do the rear main. I have it lowered just enough to get the timing cover off now. If I unbolt the idler arm from the bottom bolt will the steering assembly drop right down or is there something else i should know?

Unbolt the two screws that hold it to the frame. It will drop down just fine. You will see.
Yup, this is the easy way. Very quick and no damage to the arm joint.
Why are you removing the timing cover though? Should only need to remove the pan, oil pump, rear main cap, splash cover for the tranny, and probably the starter to get the splash cover out the way.
You can try it with the splash cover on but you'll find it sucks from a working room point of view.
