The biggest and best reason to use a stat is so the motor gets up to a warm enough operating temp to vaporize any moisture in the crank case to avoid water caused damage.

I understand that in FL it's almost always warm, but the temp when things are safe is over 180 and if your motor has moisture in it and runs for ten minutes longer cool because there is no stat you run the risk of damage.

The stat just warms the motor up faster to vaporize the moisture.

I suggest you keep the stat.

The T-stat sets the minumum operating temp on the motor. There are reasons for the temp setting, the motor will run better and live longer at the preset temp than it will at a lower temp. Leave the t-stat in and youe cooling system will also work better.
Are you having cooling problems?

Install a front air dam / spoiler to help shovel air up under the nose.

Make sure you have the proper seals in place around the core support, so that the air cannot go around the radiator in any way.

Make sure you have a good mixture of water and anti-freeze. In your warm climate, I would go with 75% water and 25% coolant.

Your car is not timed right, or too lean, or both.
