I am going to be running a 383 crate, GM part no.12498772. I have already picked up an Edelbrock RPM Air Gap intake, part no.7516. I also got an Edelbrock Performer Series carb, in another deal, that meets the basic requirements of the stroker. I really have no knowledge of these carbs, and was looking for someone who has actually run one, and their opinions on this carb. Any input is appreciated.

I ran one several years ago on a mild 350. It seemed to have better idle quality than a Holley, but it didn't have as good of wide open throttle response as the Holley. Overall I liked the Edlebroch/Carter better than the Holley. They also seem to sensitive to trash in the gas. If it started to idle rough, I would take the top off and spray it out for a quick clean. That would seem to make a difference.
I have the Edelbrock performer 750.Not impressed.....I runs ok but tweaking provides less than ideal results...I would take my and old holley any day........However, I have been looking at Quickfuel and Demon carbs as of late

I have run both the Edelbrock 750 and the 800 on my 383 (also with the RPM Air Gap). For the street, they were both excellent for me, though I got better performance from the 800. Tune it correctly once, and it stays tuned. For the strip, however, my current 825 Mighty Demon clearly out performs the Edelbrock....more rear wheel HP, quicker throttle response, and faster ET's.
Every car is different, but Edelbrock carbs are excellent street units. They're simple to tune and hold their adjustments.
For racing I'd go with a Demon. In my opinion Holley is resting on their past reputation. Not that they're bad or anything like that, just that I think they've been passed by Demon for performance.
As I said...Edlebrocks are great for the street and mild racing but Demon is the way to go for ***** to the wall performance.
It's been a few years since I've owned a Holley but I did give a large box of Holley parts (about four carbs worth of parts) to a die hard holley friend of mine a while back. Holley's IMHO are simple but I was alway's under the hood adjusting them to get it back in tune, after I switched to Edelbrock I never looked back, I tuned it once and I was done. The Holley had more neck snaping acceleration and felt course and the Edelbrocks seam to have a more smoother acceration. If you go Edelbrock make sure you install a fuel pressure regulator, they are impossible to tune if your fuel pressure is beyond 6 PSI.
I have the 750 on my built 350 and I like it much better than the q-jet that was originally on it. I tuned it up set the idle and was laying black marks for 2 lines. It was definitly an improvement.
But ... If you have a 71 with its notoriously low hood ... you might be concerned about how that hi-rise air gap intake is gonna fit under hood with carb & air filter assembly. Maybe you've already fitted it up?
Also, if you haven't already done so ... Make certain your distributor has a new melonized GM gear for compatability with the ZZ's OE roller cam. Liberally smear the teeth w/ moly grease.
