Can a nitros be set up on a stock engine? I have a friend who said he has done it on a few diffrent cars with no problems ever. I then read once in a while that new pistons and rings are needed as well as valves. Who could I believe?

Yes, it can be installed on a stock.
However, if not properly tuned NOS can cause detonation which can punch holes in pistons, damage rings, and destroy valves. So, it's entirely possible both your buddies are right, just one with good experience, the other with bad experience.

I have set up numerous nitrous systems on stock motors but I never exceed 100HP. Stock cast pistons and rods can easily handle this increase. I have often run the jets square which means the same nitrous and fuel jet, I have seen a motor pick up over 1 second with no other change. You do not need a special fuel system, change the timing or plugs with 100HP. This 100HP seems like alot more. A little goes along way.
Warning The use of nitrous can be addicting
