5 gallons of gas shouldn't take an almost empty 24 gallon tank to 3/4 full, should it? Also, the fuel gauge constantly jumps back and forth irradically while driving, although not while in park. Is this an issue with the gauge, or something a bit more serious like the float. Please help with this and maybe save me the hassle of dropping the tank out.
I needed to replace the sending unit in my 81. It does bounce around while driving a bit, but is readable. I didn't have to drop the tank to replace the sending unit. I was able to pull and replace the unit through gas door opening. Take a look and see if you can save dropping tank.

What year 69 or 81? You dont have to drop the tank for either one.The 69 comes out the bottom and the 81 out the top.When your siting still in park with key on shake the car sideways and get the gas sloshing-does it become eratic?
My 82 had a jumpy gas gauge. Would not go all the way to full. I looked at replacing the sender. My oil pressure gauge was similarly twitchy so thought could just be old gauges. Replaced oil pres. gauge and that solved the problem with it. Decided to replace the fuel gauge and that worked like a charm. Goes to full and to twitchiness. If replacing gauges be sure to note how the resistors are put on (take a picture). I fried a circuit board because I did not pay close enough attention to that 'minor' detail.

The fuel gauge problem may very well be in the sending unit. There is a reastat on the float. You could have a wiring connection going bad or it could be gummed up causing the float to stick.
