Default Overheating

I have an '80 L48 with a 350. I have been having overheating problems. To start I have had the system flushed. Found some cracks in the heads and had them replaced. I replaced the thermostat with a fail-safe 180'. Today I just put in a new water pump and radiator. The radiator was starting to leak and was really cruddy inside. Just for good measures I even replaced the sending unit for the temp Guage. I fired it up tonite and it heats up to 200' on the guage. I was thinking that the guage may also be part of the problem. I put a 200' thermometer on the upper radiator hose, it is showing 140'. There is no boiling over or anything like that. Could anyone help me with ideas I am at my wits end. Much Thanks In Advance!! Temp gauge and sender unit are matched, they are not universal fit. Put the old sender back in it and test again. Last thing is open the center dash and verify matching resistor color to gauge and sender.
That will verify the gauge system.
Cooling system basics:
Radiator seals intact and in place, Air dam intact and in place, fan clutch working.

Hey Sixfooter, Thanks for getting back so quickly Yes the radiator seals, air dam and fan clutch are working and intact. But I will try the putting old sending unit bck in. As well as take the center apart. Thanks for your guidance!! BDCMPNY
