Check your fan clutch to make sure it's operating properly. After turning the engine off, it should only rotate about 4-5 turns before stopping. If it spins more, you may need a new fan clutch. Also, check and make sure all your radiator seals are there and not deteriorated. these are often missing or deteriorated and they are very important. If they are gone, your engine will run hot. If you just installed a new engine, I imagine the radiator was removed. Were the seals re-installed? What temp themostat? Try a 180*. Lastly, what mix antifreeze are you running. I run 85% distilled water and 15% anitfreeze with one bottle of Water Wetter down here in Florida and I don't get over 140* with a 160* T-stat. I'm actually going to the 180* because it is running TOO cool.

Find a shop that has a Infrared heat gun to verify that it is really running 240.
