I see you havent had any replies so far, but if you're willing to drive into GA (about an hour and a half south of Chatanooga), call Kyle at Chastain Engines. 770-478-7780. His shop is about 3-4 miles north of Atlanta Motor Speedway on Hwy 1941.Great work for reasonable prices. Tell him Joe Hinds sent you.

Have you tried Hillbilly Vette in Kingsport? I don't know if Garry does his own engine work, but he may be able to recommend someone in the area.
