I just added a Edlebrock Preformer cam and Manifold kit with Headman headers on my stock 350 "75". I have a Rochester 600cfm 4 barrel.I was told to go with a Holley 4 barrel 600cfm. Would it make a difference?

Carb swap will have no real effect other than to lighten your wallet.
For a real boost, replace the cam. That Edelbrock cam is too mild and designed for trucks. For a stock L-48, shoot for something with ~210@.050 lift. My first cam in my '75 was a Crane Powermax 272 (about 212@.050"). Worked great.
Also, never heard of a 600cfm Rochester. Do you mean a 600cfm Edelbrock? If you still have the stock Q-Jet, reinstall it. 750cfm and a much better carb. The Edelbrock is just an old Carter AFB clone, which GM replaced with Q-Jets. I am pushing 400hp with a tuned Q-Jet.
A properly set up Q-jet will perform as good as any Holley. There are some VERY fast GS Buick's running around here. I didn`t believe they could go that fast, especially with all the weight there hauling. Made a believer out of me.
