In Canada, most muffler shops will not install an exhaust system bypassing emissions equipment. If you want a muffler shop to do it then you'll have to call several of them. You can try Pypes, Summit Racing, Corvette Central, amoung others.
Where I can bought a true dual exhaust to connect directly on my after market headers and exhaust, without cat back.
I bought a set of MAD's chambered exhaust about 3-4yrs ago. The fit was good but took a little fiddling to figure out since no instructions were provided. I ran them for a couple of years until I got tired of the "drone". I ended up going buying an "x" pipe, a pair of Dynomax Super Turbo mufflers and going to a local muffler shop for the rest. I still get a few compliments on the sound but now I can cruise in more comfort.

I too had the MidAmerica chambered system on my 81. I'm running sidepipes now, but that's a whole other story. The MA system was pretty nice. Took a little fittment work with a floorjack and a foot pushing up on the pipes, but all in all it was a pretty good bargain at well under $400.

I'd try elsewhere before going to Mid America. Their pipes just don't fit that well. I had their stainless dual setup, and ended up swapping it out for an Allens chambered system. The fit is excellent, though the chambers sound too harsh to me, but that's another story . . .
I really like the sound of Mid America's chambered system, I just didn't want to go back to dealing with their poor fit.

Actually there isn't ANY 'performance' system that connects directly to headers. The Pypes system is the only mandrel bent system that connects directly to manifolds and that same system can be connected to headers but an approximately 12-15" custom collector reducer must be made to fill the gap between the headers and the system. The design depends on the brand of headers you are using.
Here is one important point that nobody mentioned in their recomendations. You probably paid a decent bit of cash to buy and install the headers so you could improve your performance. Putting a non mandrel bent exhaust behind the headers is almost like putting a cork on the back of your tailpipes. 2.5" mandrel bent pipe outflows even 3" compression bent pipe( what you get from a local shop) by 50%! So imagine the flow you are losing when you install a 2.25" or 2.5" compression bent system.
