I have never done this, but in my head I would imagine something like this.
Grind the heads off of the rivets that hold the tracks to the seat bottoms. Weld on or drill through from the other side of the seat bottom, four bolts, to act as studs.
Mark and drill that same pattern on the floor, so that the seat fits where you want and the studs go through the floor. From under the car, you can install large washers and nuts, maybe even welded in plates to help with rigidity.
Or, if you want more head room, just take the pads out of the T-tops, and paint them to match your interior.
I am 6'2" and head room sometimes is an issue with me. Adding the glass moon roofs resolved it for me. you sure can't lower the seats much regardless of what you do to the brackets.
I was thinking of using some 1/8" or thicker steel to make a flat bracket and reuse the original holes in the floor. I didn't really want to drill new holes in the floor. I'm not sure how the floor is reinforced now to hold the seats?
