It will help if you fill in your profile so that everyone knows what year and engine your have.
The thing that helped me the most was making sure that the shroud was sealed to the radiator, to make sure that all the air goes through the radiator, not around.
Also, a few degrees of timing change can help alot.

My 388 Takes 20 Minutes To Get To 180. Hope The Phony Global Warming Makes My Vette Use More Fuel So I Can Go Faster.

Sounds like you are running with no thermostat or it is locked in open position. Twenty minutes is way too long to reach operating temp. and this can result in sludge build up which is not good for the engine.

here we go again............

lets start with the basics:

1. is it running hot at idle /slow speed driving or at highway speeds?
2. what type of "hi-flow" waterpump?
3. why no fan clutch?
4. do you have all the proper radiator and fan shroud seals installed?
5. do you have the airdam under the nose installed?
6. does the lower radiator hose have the internal spring in it?
7. what is your initial and total timing set at?
8. does your distributor have a vacuum advance and is it connected to a full manifold vacuum source and operating correctly?
9. have you checked the new t-stat to make sure it's opening fully?

That's very strange.. My setup is similar to yours and my street '68 Vert runs between 170 degrees in winter and 185 - 190 degrees in summer..

I have a 170 degrees thermostat, universal Griffin radiator, ProComp water pump (35% more flow) and steel flex radiator hoses. I run a mechanical fan and a Permacool 16" electrical fan.. The hottest that the car has ever run since I upgraded the cooling system was 205 degrees and that was after sitting for 1.5 hours in stop and go traffic in close to 100 degrees heat and extreme humidity..
On the highway, I've never seen over 190 degrees..

I run with a 160 stat on my 400. No problems. It's rare when the guage gets to 180. I have used water wetter to help keep it down, although currently without it. I do not have all my seals in place. Whenever I had a 180 in it, it always seemd to run too hot and get there fast, and take a long time to come back down. Would make me nervous.

You are bringing up a good point.. I also run water wetter and destilled water with no antifreeze.. Antifreeze causes about 10 - 25 degrees higher coolant temps..

another thought.. If you have a spun bearing, the oil temps and as a consequence also the coolant tems will run extremely hot.. Sometimes, it's difficult to know if you have a spun bearing... The best indication is if the oil pressure isnt consistent (bouncing up and down)

Double check your t-stat. I just put mine in some water on the stove and had a thermo in there. My "new" Mr gasket 160 stat didnt START to open til over 200 and didn't open fully till it was really boiling.

High flow pumps require a balanced flow thermostat...

Just take the damn thing OUT entirely and see what happens...you will have a slightly longer warm up time....but so what??

so, then tell us what it does at highway speeds....40+ for a few miles in hot weather...then when you get off the freeway ramp...and set in traffic let us know what happens THEN....

BTW fixed fans are a huge energy waster, better off with electric fans....I used Dual Spals...but if you need cheeper, go to a junkyard and look for two fans off a Ford Focus, it's said they fit the install nicely...
