Have a 427 BB. I got the car a couple years ago, and I always seem to run on the hot side 210 degrees. I just discovered that there was no thermastat in it. I bought a new thermastat 190, and installed it. I ran car for at least 30 minutes in ideal and stay about 200 to 210 degrees, no overflow or anything. Question what is the norm for the BB temp when running or idealing for this long?
the T-Stat sets the minimum operating temp, It might be a little on the warm side, but not way out of limits. Improving the cooling system would involving better heat transfer thru the radiator. Cooling system flush, electric fans, better seals etc..
First, are you sure your gage is accurate? Try to borrow a infered scanning tool.
210 is ok. The main problem I had with my 427 was idling at red lights and watching the temp gage creep towards the red zone.
There are alot of small things and a few big items to check that will make a big difference. They all mount up.
Carb jetting, timeing, radiator seals, fan clutch, loose fan belts, water pump, heat riser, air dam installed?, etc.

All a t-stat does is put you where you want to be to start. The rest of the system is what keeps you there. 210 aint bad.
