I am helping a friend over here and need Carburetor info for a 383, SBC motor with an Ebelbrock Performer air gap duel plain square spread boar manifold. Currently have a 600cfm Edelbrock carburetor and it seams to be working good. Will a bigger cfm carburetor work better and still give decent gas mileage?

If by "work better" you mean make more power, I'd say no. That sizing likely keeps you out of the secondaries in cruise and isn't holding the engine back unless you're turning > 6000 RPM. There's always power to be found in a good tune, and there are certainly more tuneable carbs.
I'm running a 388 Stroker with about 400HP and a Holley 650 CFM spreadbore carb. 650 is plenty CFM for a streetable car. If you are looking to take it to the drag races every weekend, then a bigger carb could give more power.
