My 69 bb runs 200-230, depending on the outside temp and whether moving or stopped. I have a 180 stat.

Thermostat determines minimum operational temp. The max temp is determined by the engine itself, the cooling system, air flow, etc.
My 3 '70 LS5's and '71 LS5 typically ran around 210 most of the time and 225 or 230 on a hot day and stalled in slowing moving traffic. I live in California and the average temperature is usually around 79 in spring, summer, fall.

the values are those indicated by the temp gage. but make a test with an electronic temp gage directly on the engine and check if the reading matches with the cockpit gage.
On both my vettes ( 79 350 and 69 427 ) there was a large mismatch
No higher than a small block of the same year. Those of non emission controlled engines will run cooler than those computerized and with sensors to control engine performance to meet either State or Federal standards.
