starter shims?
I have always just stuck the new starter on and if it sounded funny I would add a shim. Is there a way to check it for correctness other than the way it sounds?

engage the gear into the flywheel/flexplate. There should be enough clearance to slide the end of a small paper clip between the gear and the teeth on the flywheel. You can engage the gear by taking the wire off of the starter and use a remove switch to engage the solenoid.
