I got a 383 crate engine that dynoed as follows:

This is a dyno of the engine itself, not yet installed in the car.
Anyway, I've been trying to search for what exhaust combination would be good.
Would this engine need a 3-inch system, or would a 2.5-inch system work better?

I have a set of Flowtech full legnth headers with flowmaster super 44 mufflers and 2 1/2" true duals on my 383. It seems to work very well and the sound is incredible.
