So After all my work I installed a 180 degree thermostat when the temp on the gauge get to 210 degrees the thermostat opens and everything runs cool. The engine runs around 185-190 no mater how long or hard I run it. My question is the head where the sending unit is heats to 210 before the thermostat opens does that sound right to you all.

are you sure you are topped off with coolant?.......i have seen thermostats take a few degrees more to start to work, but generally not that much......i run a thermomater in my intake and my stat is right on at 185 and it is a 180 and the car runs 180-190.......as long as it works, should be ok......:chev
Yes I know I'm top off with coolant and I guess it just heats the heads up before it ever gets to the thermostat. If I have to drain the coolant again I'm going to put a 160 stat in to help. I have the electric fans so it does not take long to get to the 210 before the stat opens and it drop back to the 185. And once it opens there is no problems. The time from where it is at 180 to when it reaches 210 in no time so it not running those temps very long.
The temp sensor on the head is located on the hottest part of the head, so it is no surprise that the gauge could read 210 (plus or minus) and the thermostat just begin to open. So all is good, therafter the temp should modulate right around the thermostat set temp provided the cooling system is up to snuff and your not sitting in traffic
