You're doing it wrong. There are two big bolts that hold the caliper on Those are the ones to loosen. Doesn't matter what end of the hose is first, but I imagine it is easier to put it on the car first, let it hang, hook it up when you get the new caliper attached.
There's O rings between the caliper halves, when you loosened the 2 BIG bolts you broke the seal. Maybe that's your only leak if you didn't disturb the pistons.
Attach the rubber hose to the caliper first using the copper seal, then attach to the steel line.
